In a refrigerator at 40°F or below, allow about 24 hours for every 4 to 5 pounds. The start time uses the slower rate; a thawed turkey keeps another 1 to 2 days in the fridge. Never thaw a turkey on the counter. Roasting times assume a 325°F oven and a fully thawed bird; a food thermometer must read 165°F in the thigh, wing and breast.

How to use the turkey thawing calculator

  1. Turkey weight — the weight printed on the label, in pounds or kilograms.
  2. Thawing method — refrigerator, cold water or microwave, the three methods the USDA considers safe.
  3. Cooking day — leave it empty for Thanksgiving, or pick any date.
  4. Oven time — when the bird goes into the oven. The start time is counted back from this moment.

USDA turkey thawing times

The USDA Food Safety and Inspection Service (FSIS) recommends three safe ways to thaw a turkey. In the refrigerator, allow about 24 hours for every 4 to 5 pounds at 40°F or below, and set the bird in a container to catch drips. In cold water, keep the turkey in a leak-proof bag, submerge it in cold tap water, change the water every 30 minutes and allow about 30 minutes per pound. In the microwave, follow the manufacturer's instructions. Turkeys thawed in cold water or in the microwave must be cooked immediately.

Never thaw a turkey on the counter. FSIS explains in The Big Thaw that a frozen package left out for more than 2 hours is not at a safe temperature: even while the center is frozen, the outer layer sits in the "Danger Zone" between 40°F and 140°F, where bacteria multiply quickly.

Worked example

A 16-pound frozen turkey for Thanksgiving on Thursday, November 26, going into the oven at noon. In the refrigerator, 16 ÷ 4 = 4 days, so it goes into the fridge by noon on Sunday, November 22. At the faster rate (16 ÷ 5 = 3.2 days) it may be ready by Monday morning, and a thawed turkey keeps for 1 to 2 days, so starting early is safe. In cold water it takes 16 × 30 minutes = 8 hours, so it goes into the sink at 4 a.m. on Thanksgiving morning.

USDA roasting times at 325°F

These times from FSIS's Let's Talk Turkey guide are for a fully thawed bird in a 325°F oven. They are approximate: the turkey is done when a food thermometer reads 165°F in the innermost part of the thigh and wing and the thickest part of the breast, and the center of any stuffing must also reach 165°F.

Our 16-pound turkey falls in the 14-to-18-pound row: in at noon, it should be close to done between about 3:45 and 4:15 p.m. unstuffed. FSIS recommends letting the bird stand for 20 minutes before carving, and for the safest result it suggests baking the stuffing in a separate dish.

How long does it take to thaw a 20-pound turkey?

In the refrigerator, 4 to 5 days (24 hours for every 4 to 5 pounds). In cold water, about 10 hours at 30 minutes per pound, changing the water every 30 minutes.

Can I thaw a turkey on the counter?

No. The USDA warns that food left out more than 2 hours is not at a safe temperature: the outside warms into the 40–140°F "Danger Zone" while the inside is still frozen. Use the refrigerator, cold water or the microwave.

How long can a thawed turkey stay in the refrigerator?

A turkey thawed in the refrigerator can stay there 1 or 2 days before cooking. A turkey thawed in cold water or in the microwave must be cooked right away.

Can I cook a turkey that is still frozen?

Yes. The USDA says it is safe to roast a turkey from frozen, but it takes at least 50 percent longer than a thawed bird. Check the thigh, wing and breast with a thermometer for 165°F.

Can I refreeze a thawed turkey?

A turkey thawed in the refrigerator can be refrozen without cooking, although it may lose some quality. One thawed in cold water or the microwave should be cooked before freezing.
